We are looking for highly skilled Sushi Chefs for our NEW Belly Fish location in Miami – Coral Gables (2nd location in Florida). Minimum 4 years of experience in sushi is mandatory. You will work during prep and service, breaking down / filleting fish (salmon, tuna, hamachi, etc.), slicing fish for nigiri, sashimi, preparing prep lists, making sauces, garnishes, and ensuring dishes are consistently top quality according to our menu, and in general, being a team player on day-to-day tasks as needed.

Great knife skills and experience preparing sushi dishes (nigiri, maki, sashimi, etc.) in accordance with food health/safety regulations and restaurant standards are a must. You should also be able to customize customers’ orders according to written preferences and food allergy considerations.

The successful candidate is punctual, clean (works clean), organized, and performs well under pressure, maintaining the highest restaurant standards at all times.

NOTE: must be able to work nights, weekends and holidays.

Responsibilities include the following:

* Inspecting fish deliveries for quality. Must be able to clearly tell when fish is not fresh or up to restaurant standards and return to the vendor/purveyor.
* Expertly cleaning, fileting, pin boning, cutting, slicing, and properly storing different types of fish.
* Inspecting the quality of produce and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.
* Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
* Maintaining a clean work environment in order to prevent food contamination.
* Regularly taking inventory of food supplies and other products.
* Reporting any problems with kitchen equipment to the corporate team.
* Cleaning/sterilizing all utensils, instruments, and equipment used in food preparation before every use.

Requirements:
* Proven experience working in upscale sushi restaurants (ideal).
* 4 years minimum experience in a similar position.
* Valid food manager’s license.
* Sound knowledge of food safety regulations.
* The ability to work under pressure.
* The ability to stand for long periods of time and carry equipment/materials up to 50 lbs.
* Excellent time-management skills; ability to multitask.
* Exceptional teamwork attitude.

Physical Demands:
While performing the duties of this job, the employee is frequently required to stand, walk, bend, and use hands to finger, handle, or feel objects, tools or controls; reach with hands and arms; talk and hear. The employee must occasionally lift and/or move up to 50 pounds (safety/weight belt provided, if requested). Specific vision, peripheral vision, depth perception and the ability to adjust focus is required.
